I made my beet ravioli again, because it’s so damn good. It’s a beet pasta with sweet potato filling, sautéed in maple sage brown (vegan) butter sauce, with toasted pine nuts, cashew cream, and roasted baby broccoli.

I made it the same way as last time, only the filling was slightly different, with fluffy mashed sweet potatoes with cashew cream and salt. It simplified it a little. I’m planning to put together a real live recipe for this (sauce and all), so when that happens, I’ll most likely add it to this post. The whole thing is just so good it’s ridiculous.

PS: Cashew cream is so useful. PPK tells you how to make it here. You can make sour cream, ranch, you name it, by just adding a couple of ingredients to it.

Wandering Stomach: Collard Wrap

OH HELL YES. This looks so yummy.

YOU NEED:

  • 8 large collard leaves
  • Veggies of choice (avocado, sliced tomatoes, cucumbers, sprouts, etc.) and even quinoa or sunflower seeds are nice in there too!
  • Chickpea beet spread

For Chickpea beet spread:

  • 10 oz soaked or canned garbanzo beans
  • 1/2 a med-sized beet, peeled

“Beets are a unique source of phytonutrients called betalains. Betanin and vulgaxanthin are the two best-studied betalains from beets, and both have been shown to provide antioxidant, anti-inflammatory, and detoxification support.”
“In recent lab studies on human tumor cells, betanin pigments from beets have been shown to lessen tumor cell growth through a number of mechanisms, including inhibition of pro-inflammatory enzymes (specifically, cyclooxygenase enzymes). The tumor cell types tested in these studies include tumor cells from colon, stomach, nerve, lung, breast, prostate and testicular tissue. While lab studies by themselves are not proof of beets’ anti-cancer benefits, the results of these studies are encouraging researchers to look more closely than ever at the value of betanins and other betalains in beets for both prevention and treatment of certain cancer types.” - source
To keep all the nutrients intact please remember: “we recommend that you keep beet steaming times to 15 minutes or less, and roasting times under an hour.”
And if you eat a normal sized amount of beets and it turns your pee very pink, it might mean you might have an iron deficiency! So it’s natures way of helping you out, kind of! If you eat ALOT of beets one day then your pee will turn pink for sure, iron deficiancy or not! I usually roast a couple of beets and then keep them in the refrigerator to put in salads or on sandwiches anytime, really easy and soooo yum!
